Eat Ya Greens // an easy meal to recover from the day

Ready for an easy, delicious, go-to meal that is gluten-free, sugar-free, and vegan (or not, if you so choose)?

This is my favorite dinner after a long day where the last thing I want to do is worry about cooking but I most definitely am needing some serious nourishment. I usually just cook for myself but feel free to up the numbers if you're cooking for more than one. It's pretty much an everything-but-the-kitchen-sink type of veggie recipe so edit it as you please!
